Lunch ideas?

I'm running out of lunch ideas can you Mama's please help me out? I like doing stuff I can meal prep and freeze or something quick I can do that he'll love.

I make sandwiches for his lunch you can freeze them and warm them up in the microwave

I do lots of batch prepping and freezing. I try to get a fruit a veg and protein into each item so if my son only eats one it’s fine. I serve a fresh fruit and often a veg and then a “hand food” like a muffin or meatball. So far I’ve done meatballs that are 1/3 veg puree 1/3 baby cereal 1/3 meat and 3-4 eggs then bake at 350. I have done muffins made with chickpea flour or almond flour mixed with regular flour for those I mix in fruit and veg too, last night I did almond and flour with banana avocado zucchini and butternut squash mixed in . I put crushed freeze dried fruit in lots of things to make them sweeter. I also replace buttermilk in recipes for Greek yogurt thinned with milk for added protein. I did a vegetable fritter of chickpea flour spinach onion broccoli and garlic with curry powder. I made bean bites of black beans tomato cilantro onion garlic and mango pureed and mixed with masa flour and egg to bind them baked. I do oat bites ( baked with fruit and veggies)

Quesadillas have been my go to lately. Beans, cheese, chicken in a tortilla. He enjoys them and they’re easy for mama haha

We do PB&J, chicken bean and cheese quesadilla, cheese and crackers, leftovers, smoothies, going to try tuna fish today. I always pair each either a fruit and veggie as well as some crunchy snack.

@Candice my son LOVES tuna melts, the cheese helps hold stuff together.

@Katherine I’ll have to try that! She loves cheese! That’s how I hide meat otherwise she refuses lol

@Candice same, I make melty turkey sandwiches too, he's not big on meat. He'll eat chicken veggie potstickers so I bought some without a bunch of junk ingredients for when I'm out of ideas.
